Plantain Sandwich Rounds

This is a simple recipe that produces a flavorful alternative to wheat sandwich thinks/rounds and wheat traditional bread. Not only are these gluten free, they’re grain free, nut free, seed free, and legume free.

You can make a burger (like the delicious grass-fed patty melt shown in the featured image above), a savory sandwich, or just toast these for a crunchy soup or salad companion without being concerned about the nutrition–robbing effects of the most traditionaland alternative breads. This alternative bread will actually provide you with additional potassium, which is often lacking in standard diets.

Ingredients:

  • 2 eggs
  • 1 large green plantain
  • 2 tbsp green banana flour
  • 2 tbsp parmesan cheese
  • 2 fresh cloves of garlic
  • 1 1/2 tsp onion powder
  • 1/2 tsp vinegar
  • 1/2 tsp dill weed
  • 1/4 tsp salt
  • 1/4 tsp baking soda

Instructions:

1. Put all ingredients into blender. Blend well. Consistency should be like thick pancake batter.

2. Cook by the spoonful in a pan or on a griddle, spreading the batter thin in a circular motion with the back of the spoon. Once spread, cook in the same manner as pancakes.

Makes about 6-8 rounds.

Feel free to add any additional herbs that you’d like, including parsley, basil, oregano, rosemary, etc.
