Green Banana Magic: Grain Free Pancakes

Who loves pancakes? I know I do! When I began to limit the use of GLBNS (grains, legumes, beans, nuts, seeds), I found myself challenged with finding a way to make GOOD pancakes without those things. Thankfully, green bananas are a great option! What I found is that they are good with only fresh green bananas, but adding a bit of green banana flour gave them the best texture. You can also add dried fruit powders in place of the green banana flour, whether you purchase them already ground, or grind the dried fruits into powders yourself.

Ingredients:

  • 2 large green bananas, peeled (or 1 large green plantain)
  • 2 eggs
  • 2 tbsp green banana flour (optional, but best)
  • 1 tsp vanilla
  • 1/4 tsp baking soda
  • 1/8 tsp salt (I use Redmond Realsalt)
  • 1/2 tsp sucanat sugar or coconut sugar (optional)

Instructions:

Place all ingredients into a blender. Blend well.

Variations:
-Add pieces of dried fruit to the batter
-Add 1 to 2 tsp dried fruit powder like banana powder, blueberry powder, strawberry powder, or even carob powder. Carob powder will give a bit of a milk chocolate taste without using cacao.

Top with honey or real maple syrup (preferably grade B or C), your favorite fruit, and/or whatever else you’d like. Enjoy!
